Using this list, you can learn the correct weights for common baking items when making sourdough
It can be difficult to know how big to make things, especially bread rolls, pizzas etc to make sure you don’t have large size rolls or a small pizza
When you make sourdough rolls, muffins, baguettes etc, the best and easiest way to produce a uniform result
While this guide is extremely helpful, you can also calculate the dough weight of individual pieces by taking the total weight of the dough and dividing it by the number of pieces you want
For example, if the total weight of your dough is 1080g and you want 10 rolls, you would need to make your rolls 108g each
But knowing the average sizes helps ensure you don’t end up with giant pretzels or flat muffins
How to calculate dough weight?
Dough weight is the total weight of the ingredients that went into your dough, including your sourdough starter
Sourdough tossed hamburger buns have a dough weight of around 1140g
You can then use this dough weight to calculate the exact individual dough weight for the rolls

Why is dough weight important in baking?
The weight of your dough is important when baking because knowing the weight of your dough means you can choose the right baking vessel
It also means you can accurately separate the dough into specific weighted portions to ensure consistency
If you only guess the weight of your dough, you run the risk of choosing the wrong size baking dish (for example a bread pan, banneton or Dutch Oven)
Choosing the wrong size baking dish could mean your bread bakes unevenly or comes out in an odd shape
Baking bread rolls of all different weights on the same tray will result in inconsistency

Bread pan sizes can be confusing
There are so many combinations available and it can be very difficult to find the right size for your bread
I have been asked many times, how much dough to put in a bread pan
Hopefully these measurements will make life a little easier when it comes to choosing the right size bread tin for the weight of dough
The following sizes are divided between bread pans and pullman pans
A bread pan is a traditional loaf tin – it is open at the top allowing the dough to rise above the lip
A pullman pan has a lid which means you need less dough because it can’t rise above the lip

These small whole wheat sandwich loaves are created by dividing one batch of dough into two pieces of equal weight
Open Bread Pans
Small loaf pan (85″ x 45″ x 275″) 450g – 550g
Medium loaf pan (925″ x 525″ x 275″) 800g (this would be considered “standard”)
Large loaf pan (10″ x 45″ x 3″) 900g – 1100g
If you put your dough in a smaller tin, you will get a big rise above the lip and possibly a “mushroom” shaped loaf
If you put the dough in a larger tin, you will get a more standard loaf and it may not rise above the lip
That’s the great thing about loaf pans, they give you some wiggle room and flexibility in the sourdough making process
Using these tins will mean you get a straighter loaf with a small dome at the top, rather than the mushroom top

Using a scale is the best way to ensure uniformity when making sourdough buns and rolls
Making each hamburger bun exactly the same weight ensures a uniform appearance and even cooking time

A thin slice is what you would expect from a small loaf, which is often sold as a lower calorie bread, such as a Danberian or Weight Watchers loaf
An extra thick slice, is more of a slice of bread on top of the door, or a thick crust at the end of a loaf

This size of slice is usually used as standard sandwich bread, especially if you buy a ready-made pack
